Directions

1st step of puff pastry - dough preparing:
Pour cold water in mixer.
Add salt, vinegar and egg.
Stir with spoon.
Add 500g flour and knead dough about 10 min.

2nd step of puff pastry - wrapping in an "butter book":
Sprinkle with flour and roll out dough into a rectangle.
Clean out flour with kitchen brush.
Visually divide into 3 parts.
Place half of softened butter on the middle part.
Close middle part with right part.
Stick edges.
Clean out flour.
Place remaining butter on the top and close with left part.
Sprinkle with flour and roll out dough into a rectangle again.
Close middle part with right part and after with left part.
Clean out flour from middle, use flour just for roll out dough.
Put in the fridge for 30 minutes.

Roll out dough into a rectangle.
Close middle part with right part and after with left part.
Do not forget clean out flour from middle, use flour just for roll out dough.
Do roll out and wrapping twice.
You can use puff pastry now, or put in freezer and use later.

Hi Nick, try to knead dough more time. Butter should be cold, but not worm.

How long shoul I mix dough for puff pastry.

Matte, mix dough about 15 - 20 minutes. When you see what it's esy unstick from hands or mixer, mix 2 minutes more and it's ready.
