Casio e pepe (Cacio e pepe)

Directions

Bring a large saucepan of water to boil.
Add spaghetti a bit undercook.
Heat up frying pan with oil. Add pepper and stir fry 1-2 min.
Drain water from pan but keep one cup of water.
Pour cup of water in frying pan and heat until boiling.
Add spaghetti and sprinkle with 80g of each cheese (or 160g of pecorino)
Thoroughly stir cheese with spaghetti. Serve at four plates.
sprinkle with leftover cheese.

cacio de roma - 100 g
olive oil - 50 g
spaghetti - 450 g
