Corn, tomatoes and chili - typical Mexican combination, perfect for fried chicken.
Fry chicken on the preheated pan, until golden-brown colour.
Then remove it from the pan.
Finely chop onion and garlic.
Stir-fry onion and garlic on the pan from chicken.
Add salt, chili and coriander.
Put in the pan finely chopped skinless tomatoes with juice.
Return chicken in the frying pan and simmer for 20 minutes.
Then add the sweet corn and cook for another 5 minutes.
Add salt to taste and serve hot.
