For preparation of national Yam Pla-Thai Sour and Spicy Fish salad:
Place the ingredients for the salad on two plates.
Roll the fish in flour, salt it and fry in hot oil.
Then cut into pieces and arrange on the salad.
smash chillies and garlic,
add fish sauce, lime juice and sugar.
Season to taste.
Drizzle the dressing over the salad and serve.
